How To Cook Broccoli Rabe

In this video I show you how to prepare broccoli rabe or rappini, as it is known in some places. It's not broccoli. It's a bitter leafy green that makes a wonderful side dish. It's in season during spring time and fall so you'll get it for the best price during those times. All other times of the year it can be pricey (about $4 per small bunch), but if you want to splurge for a special meal I highly recommend it. You might get hooked! I have a hard time finding it down here in the south. The only place that I find it is in Publix. Kroger doesn't carry it, neither does Sprouts or Fresh Market. Restaurant depot usually has it, but you need to have a membership there to get it. You can always grow your own! You will need: ~a bunch or two or three (!) of broccoli rabe ~4-5 cloves of chopped garlic ~2 TBSP olive oil ~a large pot of boiling water Method: ~fill large pot with water, cover and put on a high flame on stove. Bring water to a boil ~rinse broccoli rabe to clean it of grit (although in my experience it does not contain much grit) ~chop off stalks (these stalks are rather fibrous and tough but if you are a stalk eater, by all means leave the stalks and just trim off the very ends) ~chop broccoli rabe in big chunks and set aside ~chop garlic and set aside ~when water comes to a boil, place broccoli rabe in and boil from 5-10 minutes depending on how soft you like stalks (I like mine soft so I boil the full 10 minutes) ~broccoli rabe is ready when stalks can be easily pierced with a fork ~drain ~In the same pot, pour in olive oil and garlic ~saute garlic until it just turns a light brown. Careful not to burn it! ~throw in the broccoli rabe and saute for another 5 minutes or so to let the water evaporate and to heat through. ~add salt and pepper to taste (You can even try to squeeze some fresh lemon juice on it too and even some crushed red pepper if you like it spicy) ~yum yum eat!
