Which grain gives best Homebrew Head Retention? The Beer Foam Experiment

Beer foam is one of the most controversial aspects of beer: some people like a full pint whereas some prefer a more continental pour. Regardless of your personal preference towards beer head I always make room in my homebrew grain bill for an adjunct grain that will specifically promote head retention so that the head lasts a little longer and is a little creamier. My go-to is carapils but from a twitter poll it seems that most people prefer to use oats or wheat or other high protein grains with foam positive properties! In this video I cook up a few 95% Maris Otter mini-mashes and pit each of these grains against each other in a real War of the Worts competition to see which grain is the true head champion! The results may surprise you... Look out for the write-up for a full break down of the experiment and my analysis of the results but basically we learn that good head is more than just adding grains that contain foam positive proteins but that it is instead a balance between foam positive and foam negative compounds.
