FULL RECIPE Ingredients 115g full fat butter 1 egg yolk 1 tsp water 1 tsp lemon juice 1 English muffin 5 rashers of streaky bacon 2 tbsps. white wine vinegar 2 eggs Cayenne pepper, to garnish Method Melt the butter in a saucepan over a medium heat until it has stopped foaming. Remove from the heat. Add the egg yolk, water and lemon juice to a tall glass jug with a pinch of salt. Steady the jug by placing a tea towel underneath, and use a stick blender to begin blending the ingredients. Slowly add the melted butter while blending, to create a smooth hollandaise. Heat a griddle pan over a medium heat. Halve the English muffin, rub with a little olive oil, and toast cut-side down in the griddle pan until golden. Remove and wrap in tin foil to keep warm. Place the bacon into the griddle pan to cook. Meanwhile, heat a pan of boiling pan over a high heat. Add the white wine vinegar. Crack the eggs into small individual bowls. Turn the bacon over. Turn the water down to a low heat, so it is just gently bubbling. Stir to create a whirlpool in the water, and quickly drop the eggs in so that they swirl around themselves and hold their shape. Making sure the water doesn’t boil, cook for 1-1½ minutes. Remove from the pan and place onto kitchen roll to drain. Remove the muffins from the foil. Layer each with bacon, and then an egg, sprinkling with sea salt. Finally, spoon over the hollandaise. Garnish with a sprinkle of cayenne pepper.
