Potato croquettes with ‪@CafeMaddy‬ 3-4 medium sized potatoes 150g sliced ham (6-7 thin slices) 1 large carrot, minced 1 large onion, minced 4 Tbsp mayonnaise salt and pepper to taste breadcrumbs 3 eggs 4 Tbsp cornstarch 1. peel and cut potatoes into smaller pieces 2. steam or boil the potatoes until fork tender 3. mince the carrots, onions, and ham into small pieces 4. mash the potatoes with salt, pepper, and mayonnaise. add more mayo, small amounts at a time, if the mix is too thick.
