Slow winter days at home baking raspberry ricotta cheesecake in our little house in English countryside village. I haven't left home much this week at all due to health reasons, so I had to find activities which will make me feel more at peace. I usually feel much better when i'm out in nature, but this time i was resting my tired mind in the comfort of our cottage. Raspberry Ricotta Cheesecake Recipe Cheesecake base: 300g digestives cookies (I used "Lighter" version as it doesn't contain palm oil in comparison to the regular ones) 75g melted butter 1 tsp of cinnamon A pinch of salt Blend cookies in a blender until fine crumb, if your blender is small like mine you might have to do it in 2-3 sittings. Add melted butter, cinnamon, salt and mix well. Place into a springform or removable bottom lightly greased pan (mine was 8") and bake for 10 minutes at 180C/ 356F Cheesecake Filling: 500g ricotta cheese (you can substitute with cream cheese if you like denser cake) 120g sugar (or more to taste, as I generally don't like cakes that are very sweet, so I used much less than usual) 3 heaped tbsp of Greek yoghurt or sour cream 4 eggs Lemon zest (half a lemon) 1/2 cup of raspberries Make sure your filling ingredients are room temperature. Mix ricotta, sugar and yoghurt together. Add eggs one by one whisking after each one. Add lemon zest and raspberries. Pour into the cookie crust and bake for 50 minutes at 160C/ 320F with a water bath underneath. You can place another oven-proof container at the bottom of your oven, filled with hot water. When it's baked, leave in the oven for about 1h with door open. Then cool completely and place into the fridge for 6h or overnight.
