Sultani Daal with Rangeen Rice - a perfect combination for your meal. #HappyCookingToYou #FoodFusion #Daal #chawal Written Recipe: https://bit.ly/3PE44mu Serves 5-6 Recipe in English: Ingredients: Prepare Sultani Daal: -Doodh (Milk) ½ Cup -Cream 3-4 tbs -Dahi (Yogurt) whisked 4-5 tbs -Hari elaichi (Green cardamom) 3-4 -Badi elaichi (Black cardamom) 1 -Laung (Cloves) 3-4 -Mong daal (Yellow lentil) ½ Cup (soaked for 1 hour) -Arhar ki daal (Split pigeon pea) 1 Cup (soaked for 1 hour) -Water 3-4 Cups -Water ½ Cup or as required -Cooking oil 3-4 tbs -Lehsan (Garlic) chopped ½ tbs -Zeera (Cumin seeds) 1 tsp -Pyaz (Onion) finely chopped 1 medium -Tamatar (Tomato) finely chopped 1 medium -Hari mirch (Green chilli) crushed 1 tbs -Namak (Salt) 2 tsp or to taste -Haldi powder (Turmeric powder) ½ tsp -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Garam masala powder ¼ tsp -Hara dhania (Fresh coriander) chopped 1-2 tbs -Koyla (Charcoal) for smoke -Hara dhania (Fresh coriander) chopped -Hari mirch (Green chilli) sliced Prepare Rangeen Vegetable Rice: -Cooking oil 4-5 tbs -Zeera (Cumin seeds) 1 tsp -Laung (Cloves) 2 -Darchini (Cinnamon sticks) 2 -Pyaz (Onion) chopped 1 small -Aalo (Potatoes) cubes 1 large -Matar (Green peas) 1 Cup -Gajar (Carrot) cubes ½ Cup -Adrak lehsan paste (Ginger garlic paste) 1 tbs -Hari mirch (Green chilli) paste 1 tbs -Namak (Salt) ½ tbs or to taste -Kali mirch powder (Black pepper powder) 1 & ½ tsp -Water 2 Cups or as required -Chawal (Rice) Basmati/Sella 500g (boiled wit salt until 3/4th done) -Band gobhi (Cabbage) 1 Cup -Shimla mirch (Capsicum) chopped ½ Cup -Hara pyaz (Spring onion) leaves chopped ½ 4-5 tbs -Hara pyaz (Spring onion) leaves Directions: Prepare Sultani Daal: -In a small jug,add milk,cream,yogurt,whisk well & set aside. -In mortal & pestle,add green cardamom,black cardamom,cloves,crush well & set aside. -In a pot,add yellow lentil,split pigeon pea,water,mix well & bring it to boil. -Remove scum,cover & cook on low flame until tender (approx. 30-35 minutes). -Mash lentil mixture with the help of wooden masher. -Add water,mix well & let it simmer on low flame. -In a frying pan,add cooking oil,garlic & fry until light golden. -Add cumin seeds & mix well. -Add onion & sauté until translucent. -Add tomato,green chilli,mix well & cook for a minute. -Add salt,turmeric powder,red chilli powder,crushed spices,mix well & cook until oil separates. -Now add prepared masala in lentil mixture & mix well. -Turn off the flame,add milk & yogurt mixture & mix well. -Turn on the flame,add garam masala powder,fresh coriander,cover & simmer on low flame for 1-2 minutes. -Give coal smoke for 2 minutes. -Garnish with fresh coriander & green chilli. Prepare Rangeen Vegetable Rice: -In a pot,add cooking oil,cumin seeds,cloves,cinnamon sticks & mix well. -Add onion,mix well and fry until light golden. -Add potatoes,green peas,carrots & mix well. -Add ginger garlic paste,green chilli paste,salt,black pepper powder,mix well & cook for a minute. -Add water & mix well,cover & cook on medium flame until vegetables are tender (6-8 minutes) & cook until ½ cup water is left. -Add rice,cabbage,capsicum,spring onion leaves & mix well,cover & steam cook on low flame for 8-10 minutes. -Garnish with spring onion leaves.
