Recipe: Ingredients: For the Lamb Chops & Steak: 2 lamb chops 2 steaks (your choice of cut) 2 tbsp olive oil 1 tsp salt 1/2 tsp white pepper 1 tbsp sugar 1/2 tsp chicken bouillon powder 1 tbsp oyster sauce 1 tbsp soy sauce 1 tsp sesame oil 2 tbsp Chinese rice wine 1 tsp cornstarch 2 garlic cloves (minced) 1/2 onion (chopped) For the Stir-Fried Broccoli: 1 head of broccoli (cut into florets) 1 tbsp olive oil 2 garlic cloves (crushed) 1 tbsp oyster sauce 1 tsp sesame oil 1 tbsp Chinese rice wine For the Mapo Tofu: 1 block of firm tofu (drained and cut into cubes) 200g minced meat (pork or beef) 1/2 onion (chopped) 1 celery stalk (chopped) 1/2 cup mushrooms (sliced) 1 tsp salt 1/2 tsp white pepper 1 tsp sugar 1 tbsp oyster sauce 1 tbsp soy sauce 1 tsp sesame oil 1 tbsp Chinese rice wine 1-2 tsp chili paste or chili sauce (adjust to taste) 1 tbsp cornstarch (mixed with cold water to form a slurry) Spring onions (for garnish) Instructions: Marinate the Meat: Mix the lamb chops and steak with salt, white pepper, sugar, chicken bouillon, oyster sauce, soy sauce, sesame oil, Chinese rice wine, and cornstarch. Let them marinate for about an hour. Cook the Lamb Chops & Steak: Heat olive oil in a wok or pan over medium-high heat. Add the marinated lamb chops and steaks, searing them on both sides for a few minutes. Once browned, cover and cook for a few more minutes to seal in the moisture. Flip the meat, cover again, and cook for another 2-3 minutes. Remove the lid, letting the water evaporate and create a nice sear on the meat. Add chopped onions and garlic, sautéing until fragrant. Once the meat is fully cooked, set it aside. Stir-Fry the Broccoli: Bring a pot of water to boil with a bit of salt and oil. Boil the broccoli for 2-4 minutes until slightly tender. Drain and set aside. Heat olive oil in a pan, add crushed garlic, and stir-fry on low heat until fragrant. Add the broccoli, and stir-fry on high heat. Drizzle in oyster sauce, sesame oil, and Chinese rice wine, and cook for a couple more minutes. Plate the broccoli and set aside. Make the Mapo Tofu: In the same pan, heat olive oil and cook the minced meat until browned. Add the chopped onion, celery, and garlic, and sauté for a few minutes. Add the mushrooms and cook until softened. Stir in salt, white pepper, sugar, oyster sauce, soy sauce, sesame oil, Chinese rice wine, and chili paste. Add a bit of water to create a sauce. Stir in the tofu cubes, mixing gently to avoid breaking the tofu. Let it cook for a few minutes to soak up the flavors. Pour in the cornstarch slurry and cook until the sauce thickens, coating all the tofu and vegetables. Garnish with spring onions. Serve and Enjoy!
