Ingredients: Pappadam Raw Rice - 2 glass Soaked for 3 hours and drained Dry Red Chillies - 6 Soaked in some water Shallots (Small) - 6 nos Garlic (Small) - 3 pods Turmeric Powder - 1/2 tsp Kashimiri Chilly Powder - 1/2 tsp Cumin Seeds - 1 tsp (optional) Sesame Seeds - 1 tsp Asafoetida - 1/2 tsp Salt - as needed Instructions: Grind rice, red chillies, shallots and garlic with 1/2 a glass of water in a blender to a smooth consistency. To the above batter, add turmeric powder, kashmiri chilly powder, cumin seeds, sesame seeds, asafoetida and salt. Mix this well and the batter is ready to make Pappada Vada. Make sure there are no clumps in the batter. Keep pappadam in the freezer at least 1 hour before you are planning to make the pappada vada. Dust off all the white powdery stuff on the pappadam. Cut the pappadams into 4 pieces. Keep a pan on the stove and add enough coconut oil for frying. Let the oil get heated first. Then dip the cut pappadams in the batter and put in the hot oil. Once it is darker in color, lower the flame and take it out. Repeat this for the rest of the pappadams. Hot pappada vadas can be served with black coffee as an evening snack.
