What i tried to tell you about in this video is the idea that you can learn skills in the kitchen, techniques, kitchen craft etc but to be a better chef all of that can sit to one side if you can’t fine tune your palate and make food taste amazing. This is a very simple dish but tickets all the boxes when it come to balancing flavours and thinking about the dish as a whole. A lovely fluffy, creamy mashed potato with kale, pan fried chicken and then a well balanced sauce. A pan sauce is brilliant because they come together really quickly and can pack a real punch. Simply fry off some diced shallots in a little oil in the pan you cooked the chicken in. Add some garlic if you fancy then deglaze with some white wine and reduce. Chuck in some chicken stock and bubble away. Now you can add some cold butter so really bring a richness to the sauce, a little blob of mustard and some fresh herbs!
