For more slow living vlogs, baking and much more to come don't forget to subscribe! :) ························································· 🍎Apple Pie🍎 Ingredients Pie crust 2 and 1/2 cups all-purpose flour, 2 teaspoons granulated sugar 1 teaspoon salt 1 cup (16 Tbsp) unsalted butter, chilled and cubed 1/2 cup ice water Salted caramel 1 cup granulated sugar 6 Tablespoons salted butter, room temperature cut up into 6 pieces 1/2 cup heavy cream, at room temperature 1 teaspoon salt Filling 6–7 large apples, thinly sliced 1/2 cup granulated sugar 2 Tablespoons fresh lemon juice 1/4 cup all-purpose flour 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1 and 1/2 teaspoons ground cinnamon egg wash optional: coarse sugar for sprinkling on crust Instructions The crust: 1.Mix the flour, sugar, and salt together in a large bowl. Add the cubed butter on top. 2.Cut butter into the dry ingredients until it resembles course breadcrumbs 3.Add water a bit at a time until the dough comes together. It should feel a little sticky but not wet. 4.Cover in plastic wrap and set in fridge for 2 hours. Make the salted caramel. 1.Heat granulated sugar in a medium heavy-duty saucepan over medium heat, stirring constantly. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn it. 2.Once sugar is completely melted, immediately stir in the butter until melted and combined. Be careful in this step because the caramel will bubble rapidly when the butter is added. 3.After the butter has melted and combined with the caramelized sugar, cook for 1 minute without stirring. 4.Very slowly stir in 1/2 cup of heavy cream. After all the heavy cream has been added, stop stirring and allow to boil for 1 minute. It will rise in the pan as it boils. 5.Remove from heat and stir in the salt. Allow to slightly cool down before using. Caramel thickens as it cools 1.Next, make the apple filling as the dough is still chilling: Place apple slices into a very large bowl. Add sugar, lemon juice, flour, cloves, nutmeg, and cinnamon. Gently toss to combine. Set aside. 2.Roll out the chilled pie dough: On a floured work surface, roll out one of the discs of chilled dough. Carefully place the dough into a 9×2 inch pie dish. 3.Fill the pie crust with the apples.. Drizzle with 1/2 cup of the salted caramel, reserving the rest for topping. 4.Preheat oven to 400°F 5.Make the lattice crust with the other half of the dough 6.Lightly brush the lattice top with the egg wash. Sprinkle with coarse sugar. 7.Place the pie onto a large baking sheet and bake for 20 minutes. Keeping the pie in the oven, turn the temperature down to 375°F and bake for an additional 40-50 minutes. If the top of your pie is getting too brown, cover loosely with aluminum foil. 🍎Apple Butter Cookies🍎 Ingredients Cookie Dough 2 cups All Purpose Flour ⅔ cups Almond Meal 1 ½ tsp Pumpkin Spice ¼ tsp Salt 1 cup Unsalted Butter, room temperature ⅔ cup Granulated Sugar 1 Egg ½ tsp Vanilla Extract Filling Apple Butter or pumpkin butter Instructions 1.Whisk together flour, almond meal, pumpkin spice, and salt in a small bowl and set aside. 2.In the bowl of a stand mixer with whisk attachment, beat together butter and sugar until fluffy. 3.Add egg and vanilla to butter mixture and mix together on medium low speed. 4.Slowly spoon in flour mixture on medium speed until dough consistency has been formed. 5.Remove dough from bowl and form into a ball with your hands. It may be a little sticky but just mold it into shape and don’t worry it will firm in the fridge. 6.Cut dough in half and wrap each section with plastic wrap. Place in refrigerator to chill for 2 hrs. 7.Preheat oven to 350 F 8.Remove one dough half from fridge and work with your hands a few times to make it pliable. Roll out onto a floured surface to ⅛ in. thickness. 9.Take solid cookie cutter and cut out cookie shapes using up entire dough. 10.Place on Parchment paper lined tray and bake for 8-12 min or until lightly golden. Place bottom cookies on cooling rack. 11.Now remove your second half of dough and repeat with large cookie cutter. Then take smaller shape and cut out the centers of each cookie. 12. Let cool and then sprinkle your top cookies without the center with a light dusting of powdered sugar. 13.Spoon a teaspoon of apple butter onto the middle of your bottom cookies.Place the top cookie onto the apple butter. Enjoy!
