This is an end of summer tale that starts with planting the first tomato seed in the spring and then taking the last gleanings of the garden to make a breakfast frittata with eggplant, red onion and peppers. 🌻Baked Eggplant Frittata🌻 1 eggplant, cubed 1 red onion, diced 1 pepper, diced 12 large eggs 4 oz feta cheese 1 cup cottage cheese fresh parsley salt and pepper olive oil -Preheat oven to 400'. Arrange vegetables on a baking sheet, season with salt and pepper and drizzle with olive oil. Roast for 30 minutes. -Meanwhile, in a bowl, mix together eggs, cottage cheese, salt and pepper. -In a 10-inch oven-safe pan add the roasted vegetables, egg mixture, top with feta and parsley. -Bake for 45-50 minutes, or until the frittata has puffed andthe center is set.
