Boyle your Apples very tender in a little wine, or for lack of Wine Ale, and then strain them with Sugar, sinamon and ginger. Make a tart of it without a cover. Filling (based on 1591 recipe): 5 apples, peeled, cored, and sliced 1/2 cup sugar 1/2 tsp cinnamon 1/2 tsp ginger Pie crust: 1 1/4 cup flour 3 Tbsp water 1/4 cup unsalted butter, melted 1 egg yolk Mix the pie crust ingredients together and roll out on to a pie pan. Bake at 400ºF for 10 minutes. Mix the filling ingredients together and place in the baked pie crust. Bake at 325ºF for 1 hour.
