The crisp air is moving in on these late summer evenings and we couldn't help but get into the mood for all the fall comfort foods this week. Join me in our farmhouse kitchen to whip up some hearty and delicious family favorites. Today I'll be sharing a filling baked oatmeal, from scratch cornbread and a cowboy chili cooked in cast iron over an open fire. We'll also round out the week with a quick and simple farm favorite of meatloaf and potatoes! Thank you so much for stopping by our farmstead! -Lauren For business inquiries: [email protected] RECIPES: Cinnamon Baked Oatmeal With Streusel Topping: 2 cups oats 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. baking powder 2 tsp. Honey 2 TBSP flax seed meal 1 tsp. vanilla 2 cups milk 1 egg Streusel topping: 1/4 cup flour 2 TBSP butter dash cinnamon 2 TBSP sugar 2 TBSP brown sugar 1. Grease a pie pan and preheat oven to 375. 2. Mix together the dry ingredients and pour into the prepared pie pan. 3. Whisk together the milk, egg and vanilla. Pour into the dry ingredients and carefully blend. 4. Bake for 15 minutes at 375. Meanwhile prepare the streusel by melting the butter, adding the sugars, cinnamon and flour. Mix with a fork and then crumble on top of the oatmeal. Continue to bake for another 15 minutes. 5. Optional: Drizzle with a homemade glaze of about 1/2 cup powdered sugar and 1-2 TBSP milk. Chili Seasoning Mix (I used 4 TBSP per 2lbs of ground beef 4 T. Chili powder 2 T. cumin 1 T. onion powder 1 T. garlic powder 1 T. paprika 2 tsp. salt *I would increase to 1 T next time (I ended up adding more) 1 tsp. pepper 1T. oregano Chili - Cowboy campfire style 2 lbs ground beef 4 TBSP of chili seasoning mix *recipe above 1 medium onion (I used onion powder this time) 2 tsp. garlic powder 2 TBSP brown sugar (optional: we added a couple more TBSP later on) 1 can dark red kidney beans, rinsed and drained 1 can black beans, rinsed and drained 2 cans diced tomatoes 1 TBSP tomato paste 1 can tomato sauce (I used canned garden tomato juice) 2 tsp. liquid smoke 2 tsp. Worcestershire sauce Cook the ground beef and chopped onion in a large cast iron dutch oven (or pot of your choice). Once cooked and crumbled, drain off any excess fat. Add the chili seasoning mix (4TBSP of the prepared mix) and any additional seasonings. Then add the tomatoes, sauce, paste and beans. Then finally finish with the sugar, liquid smoke and Worcestershire sauce. Simmer on low heat for at least 20 minutes to allow the flavors to blend and develop. Top with your favorites. I always recommend shard shredded cheddar cheese, plain greek yogurt (or sour cream) and a few candied cowboy jalapeños! Yum! Homemade cornbread: 1 cup flour 1 cup cornmeal 1/2 cup sugar 1 tsp. salt 2 tsp. baking powder 1 egg 1 cup milk 1/4 c. butter, melted Grease your pie pan. Combine the dry mixture and then make a well to add the wet ingredients. Blend everything together with a rubber spatula and then transfer batter to the pie pan. Bake at 375 for about 20-25 minutes or until a toothpick comes out clean. Smoky BBQ (Less Sugar) Meatloaf: 2 lbs ground beef 2 cups rolled oats 2 eggs 1 cup milk 2 tsp. salt 1/2 tsp. pepper 1 small chopped onion (or 1 tsp. onion powder) 1 tsp. garlic powder 2 tsp. chili powder Topping: 1 cup (Noble Made) less sugar smoky bbq sauce 1 cup (thrive market) ketchup 1 tsp. liquid smoke *optional 1/2 tsp garlic powder 1/2 tsp onion powder *for a full-sugar recipe I'd add 1/2 cup brown sugar To a large bowl, add your meatloaf ingredients and mix well. Transfer to a greased casserole dish and press into a loaf to fill the pan. Blend together the topping ingredients and pour over the top of the meatloaf. Bake at 375 for 30-35 minutes or until cooked through.
