What to do with Rock Hard Bread.

This amazing SALAD recipe was inspired by a video by @cookergirl, one of my favorite Italian food creators! There aren’t really any specific measurements for this, but here are the details: 1/2 red onion 2 tbsp apple vinegar 1 large heirloom tomato 3 cloves garlic 4 thick slices of 2-day old bread, cut into cubes 2 Persian cucumbers, sliced 1 peach, cut into chunks 1/2 cup halved cherry tomatoes 1/2 tsp sea salt 1/2 tsp cracked black pepper 2 tbsp extra virgin olive oil 3 leaves fresh basil, torn 1/2 tbsp dried Italian seasoning Thinly slice the red onion and place in a small bowl with 1 cup of water and vinegar. Set aside. Grate 3/4 of your tomato into a large bowl. Add peeled garlic cloves. Add bread, cucumbers, peach, and cherry tomatoes. Cut the remaining bit of your heirloom tomato into chunks and add to bowl. Add salt, pepper, olive oil, basil, and Italian seasoning.
