‪@cookingwithsabina‬ Ingredients: For the chicken vada: 200g minced chicken 1 small onion (finely chopped) 2 green chilies (chopped) 1 teaspoon ginger-garlic paste ½ teaspoon cumin seeds ½ teaspoon red chili powder ½ teaspoon garam masala Salt to taste 2-3 tablespoons gram flour (besan) Fresh coriander (chopped) Oil for frying For the green mayonnaise chutney: ½ cup fresh coriander leaves ¼ cup fresh mint leaves 1-2 green chilies 1 clove garlic ½ teaspoon cumin seeds 2 tablespoons mayonnaise Juice of ½ lemon Salt to taste For assembly: Pav buns Butter (optional, for toasting buns) Sliced onions, tomatoes (optional) Method: Prepare the chicken vada: In a pan, heat some oil and add cumin seeds. Once they crackle, add the chopped onions and sauté until translucent. Add the ginger-garlic paste and green chilies. Sauté for a minute. Add the minced chicken and cook until fully done. Season with salt, red chili powder, and garam masala. Let the mixture cool down, then mix in the gram flour and chopped coriander to bind it together. Shape the mixture into small patties or vadas. Heat oil in a pan and shallow fry or deep fry the chicken vadas until golden and crispy. Make the green mayonnaise chutney: Blend the coriander, mint, green chilies, garlic, cumin seeds, lemon juice, and salt to a smooth paste. Mix this paste with mayonnaise to get a creamy, spicy chutney. Assemble the chicken vada pav: Lightly butter and toast the pav buns on a pan (optional). Spread the green mayonnaise chutney on both sides of the pav. Place a chicken vada in between.
