This cake is perfect for brunch, breakfast, snack time, or anytime! Great with a cup of coffee or tea! This cake can be made in just 2 layers, all of the cake batter, then all of the topping, but I think the layers are more delicious! This recipe is very easily doubled!! Greased 8 X 8 baking dish. Pulse the filling ingredients, except nuts, in a food processor until combined, stir in the nuts. Whisk the dry ingredients. Beat the egg whites to stiff peaks. Cream the butter and honey together. Add in the 2 yolks, and 1 whole egg, one at a time until well combined. Add in the vanilla. Mix well. Alternate between the dry ingredients and the half & half. Fold in the egg whites. Add half of the batter to the prepared baking dish. Sprinkle on half of the filling mixture. Spoon on the remaining cake batter, spread evenly. Sprinkle on the remaining topping mixture, spread evenly. Bake for 35- 45 minutes, or until a toothpick comes out clean.
