Well a beautiful weather window was bestowed upon us last week. I ventured off the beach and mixed up jigging the new Mackinaw shads and slipped some crabs down into a few holes. Weakfish patrolled the perimeter and we put a beating on em. The bottom sweepers cleaned up on the other tautogs around. I prepped the tog with a mushroom cream sauce the following way: Cut tog into portions. Fry in butter/oil with flour + salt + garlic+ pepper. Sautee garlic + chopped sage for a few minutes. Add chopped Portobello mushrooms. Add half cup of heavy cream reduce, add some green onions and a drop of flour to thicken.
