Mana'eesh

Ingredients 3 cups plain flour 7g yeast 2 tsp salt 1 tbsp sugar 1/4 cup yoghurt 1 cup warm water Method In a large bowl or a clean work bench, add flour and create a dip to add yeast, salt & sugar. Pour in a little of the warm over the yeast & cover with flour. Let this sit for about 5 minutes. Add the yoghurt & remaining water & need to form a dough. This can be done by hand or a stand mixer. Knead until you have a smooth dough ball. Grease a clean bowl. Place dough into the bowl & cover. Allow dough to rest & rise for at least an hour or until it doubles in size. If using, place a pizza stone in your oven & preheat oven to the highest temperature. When dough is ready, portion into individual pieces approximately of equal size. I usually weigh my dough and then divide it equally. Roll out each portion and cover with a zataar paste (1 tablespoon zataar mixed with 2 tablespoons of olive oil). To make a cheese manooshe use a mix of grated cheddar, mozzarella & feta. Alternatively you can make a manooshe that is a mix of the cheeses and the zataar paste. Cook mana'eesh in your very oven for approximately 3-5 minutes. Keep an eye on it so it does not burn. It's ready when when base & edges are crisp & a dark golden brown. DON'T FORGET TO SUBSCRIBE!
