It is done by picking the tender shoots which includes the terminal bud along with 2/3 adjacent leaves. The picker nips off the tea shoot with use of the thumb and forefinger. This standard of plucking is necessary to ensure the quality and taste of tea. Step 2: Withering Withering is done to lose moisture of the tea leaves. Tea leaves are spread evenly on a trough or on the floor. Step 3: Roasting or Pan Frying After withering, tea leaves are roasted or fried in friiying pan untill it becomes hot and soft. Step 4: Rolling or crushing The hot roasted leaves are then spread evenly over the perforated troughs to cool and it is rolled or crushed. Step 5: Drying The roasted leaves are then dried either on dryer on by sun. Darjeeling Tea : Darjeeling tea refers to a black tea that is light to medium-bodied with fruity and floral notes, and perhaps a touch of briskness. The steeped liquor usually appears light golden to a darker bronze color with a strong fruity aroma. It is often considered one of the finest teas in the world.
