Tumeric dough mixture 2. Coconut dough mixture 3. Basic dough mixture Note: Grated coconut can be added to the dough mixture before or after proofing. Making Coconut Fritters - Coconut dough mixture 3 tbsp flour Optional : Sugar & salt to taste Set aside for 5 mins {Note: Add warm water if require} Flour Fritters 1/2 portion Tumeric dough mixture 3 tbsp flour 2 tbsp warm water (optional) Mix well and set aside Making Onions & Chillies Fritters 1/4 portion Tumeric Dough Mixture 1/4 cup flour Onions, red & green chillies, chives or celery, spring onions 1/4 tsp tumeric, 1/4 tsp chillie powder 1/4 tsp white pepper Salt to taste Optional: Tiny dried shrimps, prawns & warm water Prawn Fritters - In a separate bowl Marinate Ingredients: Prawns A pinch of salt 1/4 tsp white pepper 1/4 tbsp cornflour Making Prawn Fritters 1/4 portion Tumeric dough mixture 1/4 cup flour Onions Red & green chillies, Chives or celery, spring onions, 1egg 1/4 tsp chillie powder 1/4 tsp white pepper Salt to taste Warm water (Batter mixture - medium consistency) Other Ingredients: Potatoes Hard boiled eggs Beancurd Tempe Crabmeat Hotdogs Boiled beef lungs - Optional : Make any types of spice mix to fry all the ingredients. 1st Batter mixture : (optional) 2 tbsp cornflour 3 tbsp rice flour 1/4 tsp tumeric 1/4 tsp white pepper 2 eggs Salt to taste 1/4 cup ice water 2nd Batter Mixture : 1/2 tsp tumeric 1/2 tsp chillie powder 1/2 tsp white pepper 5 garlic (pound ) Salt to taste Optional: Beef lung - 2 tbsp sugar or honey Note: Alternatively fry potatoes & eggs with tumeric, chillie powder & salt (Optional:- Food colouring) For extra flavour add 6 crushed garlic to the hot oil Other Ingredients: Onions (cut & soak in water with 1/4 tsp salt) Green chillies Cucumber Lettuce
