The Garo are a matrilineal society, which means a baby after being born lives with his/her's mother's family which is very rare in our Country as well as in the world. The food habits of these people are quite liberal and a lot different in compare to the other parts of our country. They eat almost all kind of meat available.. be it Beef, Pork, Chicken even Bison and Deer.. Bamboo shoot used as vegetables as well as broth is one of the most famous ingredients in their dishes. They mostly don't use cooking oil and use an oil substitute instead, called Khar or Kalchi. They make Kappa using very few ingredients and it's one of their delicacies. The dish is quite spicy and very healthy in nature.. I was really skeptical before cooking or even eating it.. but I have to say, this is probably one of the most unique and different Chicken dishes I've ever eaten.. Do give it a try...
