My intention was to make Bacon. But the butcher had other ideas! This piece of pork belly was so meaty, it had hardly any fat! I really shouldn't complain, this rocked! Here are a recipe and instructions! 1 pound or more pork belly 1 cup dark brown sugar 1 cup Kosher salt 1 cup Real Maple syrup Mix the ingredients and slather the pork belly. Put it in a Ziploc bag for 7 days in the refrigerator! after 7 days wash it off well, and place it back into the refrigerator to dry, overnight! Next, take your pork belly and smoke it, cold smoke for at least 3 hours, 6 is better! Slice it and fry up some old-fashioned cold smoked BACON!
