The fermentation was as close to text book as it can get. End PH by day 27 was 2.9 with a very nice flavor. This is my only vinegar to ever begin to form a gelatinous SCOBY mother on the top within the 1st month. Maple Syrup Results: The 2-stage fermenting process into vinegar was successful. Although it was vinegar at the end of week 3 (about the same time as the honey), it was not "text book" during the process. Bubbles took longer to form than the batches with honey or sugar and the bubbles were different. Instead of being frothy, they were dense. I was never able to detect an alcohol smell like with the honey & sugar batches, but the alcohol fermentation must have happened since it did turn into vinegar. The smell remained neutral, like apples. The liquid also became the consistency of a non-sticky syrup, whereas all the sugar & the honey batches remained similar to water. End PH was 3.0.
