Alu Vadi is one of such special  recipes that must be prepared on this occasion. Everyone makes it in a different way and  I have prepared it in a very easy and simple way. Alu Vadi is also Snacks recipes and also  a speciality in Maharashtra, Karnataka, Gujarat states Take a moment to subscribe it, press Bell 🔔 icon, like and share my recipe more and more. ***साहित्य: Ingredients: 1) 2 अळूची मोठी पाने | 2 big leafs of Alu (colocasia leafs) 2) 4 टेबलस्पून चिंच | 4 tablespoon tamarind 3) 4 टेबलस्पून गूळ | 4 tablespoon jaggery 4) 2 कप बेसन | 2 Cup besan 5) 2 टेबलस्पून पांढरे तीळ | 2 tablespoon white sesame 6) 2 टेबलस्पून लाल तिखट | 2 tablespoon red chilli powder 7) चवीनुसार मीठ | salt 8) 1 टीस्पून हळद | 1 teaspoon turmeric powder 9) 1 टीस्पून धना पावडर | 1 tablespoon coriander seeds powder 10) 1 टेबलस्पून जिरे पूड | 1 tablespoon Cummins seeds powder 11) अर्धा टीस्पून हिंग | Half teaspoon Asafoetida 12) तळण्यासाठी तेल. | Oil for frying 13) कढीपत्ता | curry leaves ***Method: • First soak tamarind and jaggery in two  cups of lukewarm water for half an hour. • Then make syrup of this jaggery and tamarind. • Take two leafs of Alu, wash them properly and dry with a clean cloth. • Take one pot. Add two cups of besan and mix it with turmeric powder, asafoetida, cummins seeds, coriander seeds, red chilli powder and sesame. Then add syrup of jaggery and tamarind in it by checking the consistency of besan. Do not make it too thick or too watery. • Take one leaf of Alu and remove the black thread from the back side. (as shown in video). • Spread the besan batter on one side of Alu leaf and then put another part of the leaf over it.  Again spread the batter of the besan on it. Make a roll as shown in the video. • Repeat the same procedure and make roll from another part of Alu leaf.. • Put on gas and add two glasses of water in a steamer and boil it. • Grease the  plate of the steamer. Put both rolls in the steamer.  Steam it for 10 minutes. • Let it cool.  If you wish you can cool it in the fridge for better results. • Cut it into small pieces and serve.  They are no doubt tasty but if you like Alu Vadi fried in oil, then you can shallow fry it as shown in the video.   Both types are very tasty.
