I've not made a cooking video in a while, and been fancying this veggie/vegan dish for the last week. Ingrediants: 1 or 2 Tins of white Beans 2-3 Carrots 1 large onion Garlic (optional) 1 full celery 1 large potato 1 bunch fresh parsley 1/2 bunch fresh coriander (optional) 1 tin chopped tomatoes 2 tbs tomatoes puree s/p olive oil water. Method: Medium chop the onion and sautéed in olive oil. Add garlic, potatoes & carrots, s/p, sautee for a couple of mins. Add tomatoes, puree & water to cover. Bring to the boil, let it boil for 5 mins, then reduce heat and add the beans & Parsley (leave a bit spare to add at the end) Simmer until the potatoes are almost cooked, then add the chopped celery. check water level and seasoning. Simmer for 10/15 mins. To Serve add a drizzle of olive oil over the stew and chopped Parsley, with some nice bread to dip in the juice and raw onion. Enjoy 😋 ..............
