It is famous for its special flavors and it is a thick mixture of different vegetables,curd and coconut, seasoned with coconut oil and curry leaves. Coconut oil which gives aviyal the aroma and taste, hence do not substitute. Since you are using a variety of veggies, use only a little of each as it will all add up to quite a bit when you cut them all up. You can use other vegetables like the small eggplant, other squashes or melons etc. for this aviyal. This is usually the combination I use. Yogurt is used as the souring agent here. In certain parts of Kerala, tamarind is used as the souring agent instead. If using tamarind, use a lime sized ball, soak in water and take out the pulp.
