Dr. Savoie Roskos has focused her research on finding ways to help individuals struggling with food insecurity, with an emphasis on accessing nutritious food. One program she invested in is the Double Up Food Bucks program, through which individuals receive matching funds to what they receive from SNAP, effectively “doubling” the money they can spend on food. Over 50 farmer’s markets, fruit stands, and Community Supported Agriculture groups in Utah have partnered with Double Up Food Bucks, allowing SNAP recipients to spend their funds accessing fresh, nutritious food. “Research has shown that interventions such as Double Up Food Bucks and campus food pantries can improve food security, and it’s essential that we continue to find support at various levels to keep programs like that going.” “We can continue to implement effective programs by connecting research to practice. To me, that’s why an opportunity like the Blue Plate Research series is so essential, because it allows me to share my research with people who have a vested interest in food insecurity and can bring this back to their communities.” The presentation was held on October 24 at Gallivan Hall in Salt Lake City.
