I'm taking the classic French dessert, Clafoutis, and putting a Gluten Free spin on it, so that it can be enjoyed by all. I've featured Cherries and Blueberries in this recipe, but feel free to experiment with other seasonal fruit. Peaches, Pears, and Plums are also great :) Facebook Page: Vijaya Selvaraju Instagram: @vijayaselvaraju Twitter @vijayaselvaraju Ingredients: 1/4 Gluten Free All Purpose Flour 1 Pinch of Salt 1/2 cup Heavy Cream 1/2 cup Milk (2%, Skim, or Homo) 1 tsp, Vanilla 4 eggs 1/3 cup, Sugar 1 cup, Pitted and Halved Fresh Cherries 1/2 cup, Blueberries Preheat oven to 350 degrees. Combine Flour and Salt in bowl, and whisk to combine. In a separate bowl, combine remaining ingredients excluding fruit. Whisk until eggs are completely incorporated. The mixture should resemble Crepe batter. Grease an 8 inch Cake Tin/Cast Iron Pan with 1 tbsp of Butter. Pour in batter. Arrange fruit on top of batter. Place pan into the oven for 35-40 minutes until the edges have become golden brown, and the centre is set and no longer jiggly. Allow to slightly cool. Garnish with powdered sugar if desired, and enjoy! :)
