Raisin brioche: how to make it beautiful and fluffy

INGREDIENTS For 2 breads: 680g (5 2/3 cups) of flour  80g (4 tbsp) of sugar  380ml (1 4/5 cups) of milk 7g of dry yeast  1 tsp of salt    50ml of olive oil   60g of melted butter Sugar  100g of raisins  150g of dried cranberries  Egg wash  METHOD 1. In a bowl mix together 2 eggs, milk, dry yeast, and sugar. Add in flour, salt, and butter. Let it rise for 2 hours. 2. Divide into 2 parts. Roll out each, and spread with butter, sugar, raisins, and dried cranberries. 3. Roll the dough, cut with a knife in the middle, and roll it in a spiral form. 4.
