This delicious ginger cookies recipe is a tasty way to add protein to your diet and pairs lovely with a coffee or tea. I love the warm spices in this ginger cookies recipe including Vitatree Turmeric Curcumin, they are gluten free, high in protein, and a perfect healthy snack for any cookie monster. Ingredients 1 tbsp Chia Seeds 3 tbsp Water 3 cups Gluten Free All Purpose Floor ¼ cup Monkfruit Sweetener 2 scoops Vitatree Vanilla Protein Powder (whey or vegan) 2 tsp Ginger Powder 2 tsp Cinnamon ¼ tsp Salt ½ tsp Pepper ¼ tsp Clove ¼ tsp Pumpkin Spice ¼ tsp Baking Soda ¼ cup Coconut Oil (melted) ¼ cup applesauce ¼ cup molasses 5 capsules Vitaree Turmeric Curcumin (opened) Directions Make chia egg: whisk chia, water and egg in a small mixing bowl. In a large mixing bowl combined dry ingredients and whisk until thoroughly combined. Add melted all wet ingredients, including chia egg to a medium mixing bowl and stir together. Add wet ingredients to dry ingredients and mix well (you are allowed to use your hands to do this part). Divide the dough in half, shape each half into an oval disk (about 1” thick), and refrigerate them for one hour. Preheat oven to 350°F, and line two baking sheets with parchment paper (or spray with non-stick cooking spray). Lightly flour countertop and roll out dough to ¼” thickness, use cookie cutter to create desired shape, and place on baking sheet about ½” apart. Bake for 9-11 minutes. Cookie will harden slightly after removing from oven. Let cool and decorate with frosting if desired. Icing (optional) Ingredients ¼ cup Monkfruit Powdered Sweetener 2 capsules Vitatree Organic Vitamin C (opened) 2 tbsp Almond Milk Directions Combine powdered Monkfruit, Vitatree Organic Vitamin C and 1 tbsp Almond Milk in a small bowl and whisk until creamy adding in the second tbsp of Amond Milk as needed.
