This is a simple Mutton Rogan Josh Recipe that is an authentic Kashmiri recipe. Ingredients: Plain Oil 1 Tbsp Cumin Seeds 1/2 Tsp Cinnamon Stick 2 inch long - 1 Stick Cloves (Laung) - 3 Pieces Elaichi (Green Cardamom) - 3 Pieces Badi Elaichi (Black Cardamom) - 2 Small Pieces Hing (Asafoetida) - A Pinch (Most Important ingredient for authentic taste) Salt to Taste Kashmiri Chilli Powder 2 Tsp Yogurt 3 Tbsp Ginger Powder (Sounth) 1.5 Tsp Fennel Powder 1 Tsp Turmeric Powder - a pinch Water 1.5 to 2 Cups (Adjust what you need to make meat tender) Cumin Seeds - 1/4 Tsp crushed Cardamom (Elaichi) - 2 pieces crushed Saute in warm oil, the cumin seeds, cinnamon stick, cloves, cardamom and black cardamom Add mutton and fry on low heat covered until all water has dried up Add salt and kashmiri chilli powder. Saute for 1 min Add yogurt (Curd) and simmer until yogurt is cooked (there should be no white specs. Make sure the yougurt is well blended before adding) Add the ginger powder, fennel powder and turmeric. Saute for 2 min on low heat Add the water and cover and cook until meat is tender When meat is cooked add in crushed cumin seeds and Cardamom pods 2 pieces Serve with rice, chapati or naan Mutton Rogan Josh is a Kashmiri dish with its origins to the Mughals who would visit Kashmir during the summer. Rogan Josh is a great dish for cooking at home with hardly any preparation and only a few steps to make it.
