INGREDIENTS: 500g baby potatoes 200g slices bacon, chopped 1 red Onion, finely chopped 1 Garlic clove, crushed 1 Tbsp apple cider vinegar 2 Tbsp water 2 Tbsp extra-virgin olive oil 1 Tbsp mustard 1 Tbsp sugar 1/2 tsp Kosher salt 1/2 tsp Freshly ground black pepper 1 Tbsp fresh parsley , finely chopped (or dill or spring onion) INSTRUCTIONS Step 1 Cook the potatoes in salted water until potatoes are easily pierced with a knife, 15 to 20 minutes. Drain and let cool slightly. Cut them in half, set aside. Step 2 Fry the bacons over low heat until crispy, about 8-10 minutes. Reserve the fat in pan, and transfer bacon to a plate, set aside. Step 3 Fry the onion in the bacon grease over medium heat, 3-5 minutes. Add the olive oil, garlic, mustard, vinegar, sugar, water, salt, and pepper to the pan and bring to a boil. *Scraping the base of the pan to dissolve stuck to the pan into the liquid. Step 4 Once the liquid boiling, add potatoes, and 1/2 of the bacon. Toss to combine until all the potatoes are well coated in the dressing. Cook until heated through, about 3 to 4 minutes. Transfer potato salad to a serving dish then sprinkle remaining bacon and parsley over top. Serve warm. Step 5 *Enjoy!😊 Tip and Tricks: DO NOT use flour. Waxy potatoes typically have thinner skin, hold their shape rather than starchy so use Waxy potatoes. Get potatoes that are of even size so they cook through at the same time. Put your potatoes in cold water before bringing them to a boil. If you put potatoes directly into boiling water, the outsides will cook and the insides will be raw Be careful about SALT , bacon is salty. also you cooked potatoes in salty water. I used regular or original mustard instead of Dijon mustard which I find is more delicious. (German mustard it was difficult to find 😁) Add Chopped Fresh parsley or spring onion or dill just before serving for a freshness and color! Never use more than 1 Tbsp sugar ! The sugar must balances the flavor with vinegar, it should not sweeten the salad. In Germany they use Beef Stock instead of water. In Germany, Potato Salad is served as a side dish with sausages or any meat food such as Schnitzel or pork chops or grilled meat. keep the salad up to 2 days in the fridge. You can keep your potato salad in the freezer for 3-4 months but the potatoes may have a softer consistency once thawed.
