In a bowl, whisk together 3¼ cups flour, sugar, yeast, salt, and nutmeg. 2. Then bring it over to your electric mixer with the dough hook attachment. Add the milk, butter, eggs, lemon zest, and vanilla and mix on medium-low speed until a smooth and sticky dough forms. The dough should feel tacky but not stick your finger when quickly touched. If the dough is sticking to your finger add in the remaining ¼ cup of flour. Scrape the dough down into the bowl, cover, and let rise in a warm spot for about 1-2 hour of its doubled in size. 3. Lightly flour your surface, and roll and stretch the dough into a rectangle. Since I am doing a twist method for this king cake I divided the rectangle in half. If you are not twisting, do not cut it. 4. In a small bowl, combine the granulated sugar, brown sugar, and cinnamon until combined. 5. Brush on your melted butter to the surface of the dough then spread in the filling. Make sure to leave ½-inches along one side. Starting at the long side, tightly roll up the dough into a log, and pinch the seams to seal. Roll seams side down and carefully transfer to your prepared baking sheet. This is also the time to add in the plastic baby to your cake. 6. To do the twist method, pinch one side together and carefully twist the do by bringing the top piece over the bottom piece. Make sure everything is twisted tightly, pinch the other two ends. 7. Bring them together, and pinch the ends together to create a wreath. 8. Loosely cover and let rise until doubled in size, 45 minutes to 1 hour. While rising, preheat the oven to 350F. 9. Uncover and bake for 25 to 30 minutes or until golden brown. Let cool completely on the pan. Transfer to a serving platter. 10. In a small bowl, mix together the powdered sugar and milk until thick but spoonable. Spread over the top of the cake, and push the icing to drip down the sides. Decorate with alternating sections of green, purple, and yellow sugars. Now enjoy Mardi Gras with your very own, homemade king cake!
