How To Make Bendakaya Pulusu || Family Recipes || Infinity Platter || 2022

Today we’re making another house hold favourite, Bendakaya Pulusu. You’ll absolutely love this dish. Here’s the recipe - 250g Bendakaya or Ladies Fingers Oil 2 tbsp 1/4 tsp Salt 1/8 tsp Turmeric 1/4 tsp Ginger garlic paste - First wash and pat dry 250g of bendakaya. Cut off both the edges and cut each piece in half. - In a pan, add 2 tbsp of any vegetable oil and add the bendakaya. - Cook for a minute and then add 1/4 tsp salt, 1/8 tsp turmeric and stir again. - Next Add 1/4 tsp ginger garlic paste. - Cover with a lid and cook for a 5-10 minutes on medium heat. - Leave it aside while you make the pulusu. 2-3 tbsp Oil 1/4 tsp Mustard seeds 1/2 tsp Jeera or cumin powder 1 medium Onion 15 Curry leaves 2 tsp Ginger garlic paste 1 tsp Turmeric 1 medium Tomato 1 - 1.5 tbsp Chilli powder 1/2 tsp Dhaniya or Coriander powder 1tbsp Yoghurt mixed 2 tbsp with water 1.5 tsp Bellam or Jaggery 2-3 tbsp Tamarind wayer or Chintakaya pulusu (depending on how thin or thick your pulusu is, so test it) 1.5 tsp Jeera or cumin powder 1.5 tsp Menthulu or Fenugreek powder - In the same pan, heat 2-3 tbsp of oil and add 1/4 tsp mustard seeds and 1/4 tsp cumin and stir. - Add 1 medium finely chopped onion and sauté for a few minutes. - Add about 15 fresh curry leaves and sauté again for a few minutes. - To the onions, add 2 tsp ginger garlic paste and cook for a few minutes - Add 1 tsp turmeric & sauté for a minute. Add 1 medium chopped tomato and cook for a minute. - Add 1 tbsp or more Chilli powder depending on your spice preference - Add 1/2 tsp Dhaniya or coriander powder and cook for a minute. - Mix 1 big tbsp of yoghurt in 2 tbsp of water and add it in stages to the onion spice mixture. Stir fast and continuously as you add in the yoghurt otherwise it’ll curdle. - Add 1.5 tsp of jaggery and 2-3 tbsp of lightly diluted tamarind water in stages and keep stirring continuously. - Cook for a 2-3 minutes. - Add the bendakaya and 1.5 cups of water, cover the lid and cook for 5 minutes - Add the Jeera & menthulu powder. I made this by dry roasting and powdering 1.5 tsp of each Jeera & menthulu) - Taste and add salt at this stage - Cook for another few minutes and it’s ready! Other options for the pulusu - make the same pulusu and you can change up the bendakaya to potato, sorakaya, vankaya or even fish 😁 Enjoy!
