On the positive side it makes perfect desserts and a wide range too, but on the downside it's noisy and expensive. NOTE: I said 'compressor' when I meant 'condenser', I guess I had brain freeze. Recipe for butterscotch ice cream: 500ml double cream 250ml whole milk 1 teaspoon vanilla extract 5 egg yolks 120g soft brown sugar Simmer the cream and milk together with the vanilla. Meanwhile whisk the egg yolks and sugar together with a pinch of salt. Gradually add the simmering cream to the egg and once combined return to the heat. Simmer until thickened, then refrigerate for an hour. Churn in the ice cream machine to your desired setting.
