Tools: Instant Pot 6.5 quart Intent Pot steamer rack insert Steamer basket Step 1: Rinse and soak 3 cups soybeans overnight. Step 2: Drain soaking water and place soybeans in steamer basket in the Instant Pot with water in bottom of pot coming up to the bottom of the steamer basket. Close lid and bring up to pressure and steam pressure cook for 3 hours. Step 3: After the beans are well cooked take them out of the pot and steamer basket. Save the cooking liquid on the bottom. Place soybeans back in the empty pot. Level out the beans and add 1/2 of a cup of the cooking liquid back in. The liquid provides the moisture needed for the beans to properly ferment. Put lid back on and set to yogurt setting which will not cook the beans but slightly warm them to ferment. Set the timer for 24 hours. After the beans have been fermenting for 24 hours they are done! Open the pot and take a look at your beautiful natto. You will see white bacteria covering the beans and when you stir them you will the stringy natto slime! To store the natto let it cool down in the pot or in a container in your fridge. To prepare the natto for eating mix with your favorite seasonings.
