Dal Dhokli Serves 6-8 Recipe in English: Ingredients: Dough: -Chakki ka atta (Whole wheat flour) sifted 1 Cup -Haldee powder (Turmeric powder) ½ tsp -Lal mirch powder (Red chilli powder) ½ tsp -Hing (Asafoetida) powder 1/4 tsp -Namak (Salt) ½ tsp -Ghee ½ tbs -Pani (Water) 3/4 Cup or as required -Arhar daal (Split pigeon pea) 1 & ½ Cup (soaked for 2 hours) -Pani (Water) 4-5 Cups or as required -Lal mirch powder (Red chilli powder) ½ tbs or to taste -Haldee powder (Turmeric powder) ½ tsp -Adrak (Ginger) chopped 1 tsp -Lehsan (Garlic) chopped 1 tsp -Namak (Salt) 1 tsp or to taste -Gur (Jaggery) 1-2 tbs -Ghee 2 tbs -Hing (Asafeotida) powder 1/4 tsp -Zeera (Cumin seeds) ½ tsp -Raidana (Mustard seeds) ½ tsp -Lal mirch (Red chillies) 2-3 -Kary pata (Curry leaves) 7-8 -Tamatar (Tomatoes) cubes 2 small -Pani (Water) ½ Cup or as required -Hara dhania (Fresh coriander) chopped ½ Cup -Pani (Water) ½ Cup or as required -Lal mirch (Red chilli) for garnishing -Hara dhania (Fresh coriander) chopped for garnishing -Lemon juice -Peanuts for garnishing Directions: -In bowl, add whole wheat flour, turmeric powder, red chilli powder, asafoetida powder, salt, ghee and mix well. -Gradually add water and knead until dough is formed. Cover and let it rest for 10-15 minutes. -Grease hand with ghee and knead dough again. -Take a small dough, sprinkle dry flour and roll out with the help of rolling pin. -Cut into pieces with the help of the cutter and sprinkle dry flour then take out on a plate. Sprinkle dry flour & set aside. -In pot add split pigeon pea, water, red chilli powder, turmeric powder, ginger and garlic. Mix well and bring it to boil. Cover & cook on low flame until tender (approx. 1 hour). -Add salt & jaggery. Mix well and cook for 2-3 minutes & set aside. -In frying pan add ghee and let it melt. -Add asafeotida powder, cumin seeds, mustard seeds, red chilies, curry leaves and mix. -Add tomatoes.Mix well and cook for 2-3 minutes. -Add it in pot and mix well. -Add water, mix well and bring it to boil, add fresh coriander and mix well. -Add prepared dough pieces and mix gently. -Add water, cover and cook on low flame for 15-20 minutes. -Garnish with red chilli, fresh coriander, lemon juice, peanuts & serve! Recipe in Urdu: Tarkeeb: -Bowl mein chakki ka atta, haldee powder, lal mirch powder, hing powder, namak aur ghee dal ker ache tarha mix ker lein. -Thora thora ker k pani shamil karein aur goond ker dough tayyar ker lein aur dhak ker 10-15 minutes k liye rakh dein. -Haath ko ghee sa chikna karein aur dough ko dubara goond lein. -Chota paira lein aur atta chirak ker rolling pin ki madad sa bail lein. -Cutter ki madad sa pieces mein cut ker lein aur atta chirak dein. Plate per rakh ker atta chirak dein aur side per rakh dein. -Pot mein arhar daal, pani, lal mirch powder, haldee powder, adrak aur lehsan daal ker ache tarha mix karein aur ubal anay ka baad dhak dein aur halki ancch per gal janay tak paka lein (approx. 1 hour). -Namak aur gurr daal ker ache tarha mix karein. 2-3 minutes k liye paka lein & side per rakh dein. -Frying pan mein ghee dal ker melt ker lein. -Hing powder, zeera, raidana, lal mirch aur kary pata daal ker mix karein. -Tamatar daal ker ache tarha mix karein aur 2-3 minutes k liye paka lein. -Pot mein daal ker ache tarha mix ker lein. -Pani daal ker ache tarha mix karein aur ubal anay ka baad hara dhania daal ker mix ker lein. -Tayyar dough k pieces daal ker gently mix ker lein. -Pani dal ker dhak dein aur halki ancch per 15-20 minutes k liye paka lein. -Lal mirch, hara dhania, lemon juice aur peanuts se garnish ker k serve karein!
