WHAT I ATE IN MISSISSIPPI (VEGAN) PT. 2 // EP #37 // FEATURING MISSISSIPPI VEGAN

I spent a few days with my friend Timothy Pakron aka @MississippiVegan at his beautiful home in Jackson Mississippi. Timmy is also a vegan chef and food blogger so we had SO much fun cooking in his kitchen. This is Part 2 of this vlog and it starts by us trying the oh so popular unicorn noodles or pink noodles. I hate everything unicorn in the food world, so we just made pink noodle dishes and decided to make it a food styling challenge ala hot for food! You decide who wins! We also made vegan burgers with fieldroast patties, which are epicly delicious. We hit up the Mississippi Farmer's Market and meet Timmy's hot farmer friend! Timmy makes me vegan gumbo, rice pilaf, his secret bacon (you'll have to wait for his cookbook!), and vegan biscuits from Annie's which we can't get in Canada... I don't think?! The next morning we make a huge brunch feast and take a photo of it. It included Timmy's tater tot casserole, tofu scramble, more secret bacon, and more biscuits with vegan butter. We head to Gulfport and I try boiled peanuts for the first time in my life. They were from a gas station, btw! Then in town we check out Lil' Ray's famous po boys. But because we're vegan we have to eat french fry po boys. This is not a vegan restaurant! We also get some snacks at Health Nuts, the local health food store. On the way from Gulfport back to Jackson we hit up Qdoba's - a fast food chain. They have really good vegan options! Including a tortilla soup and customizable burritos, tacos, burrito bowls, or taco salad. My final meal in Jackson was again at High Noon Cafe. This place is super cute. They have really simple homemade food with just a few options available each day of the week. I highly recommend it!
