Today I'm sharing 3 Low Carb Side Dishes that are easy, healthy, and made fast since we're using frozen vegetables. These low carb vegetable recipes include recipes for green beans, cilantro lime cauliflower rice, and balsamic Brussels sprouts. (serves 3-4) Ingredients: 1 tbsp ghee 1 shallot, diced 1 12 oz bag frozen whole green beans 4 sprigs fresh thyme, chopped (or 2 tsp dry thyme) 1 tsp minced garlic salt and pepper, to taste Instructions: Heat a saute pan over medium heat. Add the ghee and shallot with a pinch of salt. Stir and cook for 2-3 minutes or until shallot is translucent. Add green beans, thyme, garlic, and salt and pepper. (I usually add 1/4-1/2 tsp each then taste.) Cook another 5-7 minutes or until green beans are warm and tender. Serve warm and enjoy! Cilantro Lime Cauliflower Rice Link: https://wellbyjordanwaddell.com/cilan... (serves 3-4) Ingredients: 1 tbsp avocado oil 1 12 oz package frozen riced cauliflower 2 tsp onion powder 1 1/2 tsp garlic powder 1/2 tsp salt 1/8 tsp cayenne pepper (optional) 1 lime, zest and juice 1/3 cup cilantro, chopped Instructions: Heat a saute pan over medium heat. Add the avocado oil, cauliflower rice, spices and salt. Cook, stirring frequently for 7-8 minutes or until cauliflower is completely heated through. Lower heat to low, add lime zest, lime juice, and cilantro. Stir to combine. Serve warm and enjoy! Balsamic Brussels Sprouts Link: https://wellbyjordanwaddell.com/balsa... (serves 3-4) Ingredients: 1 tbsp avocado oil 1 tbsp balsamic vinegar 1 tsp dijon mustard 1 tsp minced garlic 1/2 tsp salt 1 12 oz bag frozen Brussels sprouts, halved 1/2 red onion, thinly sliced Instructions: Preheat oven to 400°F. In a large bowl, whisk together the oil, vinegar, mustard, garlic, and salt. Add the Brussels sprouts and onion slices to the marinade and toss to coat. Spread vegetables in a single layer on a sheet pan lined with parchment paper. Roast for 15-20 minutes, or until sprouts are tender and caramelized.
