Add in the olive oil and seasoning and mix to combine.  In a separate bowl, add all of the tangy yogurt sauce ingredients and mix well. Store in the fridge until ready to serve.  Place a pan over high heat, add a splash of olive oil, and sear the seasoned chicken for 8 minutes or until cooked through. You may need to do this in batches to prevent overcrowding and steaming the chicken. Alternatively, this can be done in the oven. See notes below.  To assemble, warm your wraps slightly in a pan or microwave and place them down the sauce. Add the chicken, tomatoes, onion, and lettuce and top with a little more sauce. Wrap tightly with the seam facing down to prevent it from falling apart.  The tortillas can be kept fresh, or if you’d like to toast them, do so in a pan over medium-high with a splash of olive oil and toast to your liking.  Slice the wrap in half and use any remaining tangy yogurt sauce as a dip.
