Wall Pennywort Salad

This is Wall Pennywort, also know as Navalwort and I even met someone who knew it as Venus’ Belly Button… They’re mainly found on stone walls and are common across the UK and Ireland. There are records of the indigenous Irish using them for an array of ailments like drawing out stuck thorns in your skin, chilblains, bee stings, nettle stings, sore eyes, jaundice, TB and headaches to name a few. I don’t personally know if any of these are true but this wild edible is held in high regard for its medicinal properties and tastes great. They’re considered a gourmet food and can be found in high end restaurants across the country. To me they taste like something between lettuce and cucumber and make an excellent foundation for a salad and they’re particularly good after a rain as their sponginess holds the water and makes them really refreshing.
