Recorded early on in the project, this teardown took a while to finish because I just wasn't sure how the sensor worked. After some patent research I was able to come back to this teardown and wrap it up with a better explanation. Oil quality has become a concern in recent years and this sensor is a way to automate the oil quality testing process in commercial fryers. Enjoy!
