The Instant Pot makes short work of ribs and they come out super tender. I used to cook these low and slow in the oven at 250º for 2-3 hours and then throw them on the grill with bbq sauce. That’s still a great way to make them, but if you want to get it done in a lot less time, try this method. Some notes: • I used apple juice for my cooking liquid, but you can use whatever liquid you like. Some great options are pickle juice, beer, broth, or just plain water. • These back ribs were on a BOGO at the store, but you can use St. Louis ribs or spareribs. You may have to cut the spareribs down into sections to fit into your pot. • I had some leftover homemade BBQ rub from a different recipe, but you can certainly use a store-bought rub. I just love the taste of the McCormick’s and they have such a wide variety of flavors. • If you like a little more chew on your ribs, only cook for 20 minutes. Go for 30 if you want them more fall-apart. Today’s Ingredients: 2 racks of pork ribs, 3-4 lbs each liquid smoke, about ¼ cup BBQ rub, about ½ cup 2 cups apple juice BBQ sauce Instructions: 1. Pat the ribs dry and remove the membrane from the backside. 2. Rub a little liquid smoke on the ribs – this will help the seasoning stick – then rub with your seasoning mix. Set the ribs aside for 15-30 minutes before cooking. 3. Pour the apple juice into the pot insert and set a steam rack into the pot. Coil the ribs and insert them into the Instant Pot. Try to leave a little space in between the coils to let the steam work all around the meat. 4. Lock the lid and cook on manual/high for 25 minutes, then natural pressure release for 15-20 minutes before quick-releasing any remaining pressure. 5. Remove the ribs onto a baking sheet. 6. Slather with barbeque sauce and place under a broiler for 5-10 minutes. Flip and repeat on the other side. 7. Yum.
