Black currant jelly: Rinse, cover with water in a pot, bring to a boil, and simmer for 45 minutes. Place in a metal mesh strainer over the pot. In a glass bowl with cheesecloth, strain again. Allow to drip in cheesecloth on top of metal strainer for a few hours or overnight, Measure liquid and equal parts sugar. Bring to a rolling boil for ten minutes. Ladle into hot sanitized jars. Add warm lids, rings fingertip tight, and water baths for 10 minutes. Basil Pesto -1/2 cup chopped walnuts -2 cups packed chopped basil -1/3 cup parmesan cheese -1tbsp lemon juice -1/2 cup olive oil -1 tsp salt
