HELP US GROW OUR CHANNEL, SUBSCRIBE HERE -    / @mohamedm7848   Ingredients 3 medium lamb shanks 3 tbsp olive oil (or any unflavoured oil) for the pan plus 1 tbsp extra for the tagine 1 tsp salt (or to taste) for the lamb plus 1 tsp (or to taste) extra for the tagine 3 large onions (sliced) 3/4 tsp cinnamon powder 1 tsp cumin powder 3/4 tsp turmeric powder 3/4 tsp ginger powder 3/4 tsp white pepper 1 heaped tsp paprika 5 garlic cloves (grated) 2 medium tomatoes (skins peeled and then diced) A bunch of parsley and coriander (chopped) 250 ml lamb stock or water plus extra if required Drained chickpeas (roughly 150 g) Method 1. Salt the lamb shanks and then sear the meat in a hot pan with oil. Make sure to brown the meat on all sides. 2. Remove from the pan and place in the sliced onions. Reduce the heat to caramelise, this will take around 5-10 minutes. 3. Once onions have caramelised place them in your tagine or cooking pot. *If you are using a tagine make sure to place it on top of a heat diffuser as to not damage it* 4. Add in your spices, garlic and oil and give it a good mix. 5. Place the lamb on top of the onions and turn it around to coat it with the spices. Now turn on the heat to medium and place the lid on the tagine and cook for around 10 minutes. 6. After 10 minutes place the diced tomatoes and chopped parsley and coriander on top of the meat and give it a mix. 7. Add the stock (or water) and cover the tagine. Reduce the heat to low and let it cook. 8. Keep checking on the tagine and stirring occasionally, adding more water or stock if required. 9. After an hour of cooking add in the chickpeas and continue cooking. 10. The tagine will take around 2-3 hours to cook on a low heat.
