Mortazza sandwich - ode to Evan Funke Ingredients - 1 pizza dough ball (recipe available on my website) - Extra virgin olive oil (EVOO), for drizzling - 150g (5.3 oz) ricotta cheese - 1 lemon - 1/8 of a nutmeg, finely grated - 150g (5.3 oz) Mortadella, thinly sliced - 20g (0.7 oz) toasted pistachios, roughly chopped - cracked black pepper, to taste Method 1. Preheat your pizza oven to 450°C (840°F), or your home oven to its highest temperature and place a pizza steel inside to heat up. 2. In a bowl, combine the ricotta with a pinch of salt, freshly cracked black pepper, the grated nutmeg, and both the zest and juice of the lemon. Mix well to fully incorporate the seasonings. 3. Stretch out the pizza dough as if you were preparing a pizza base. Drizzle some EVOO over the dough, then fold it in half. Drizzle additional EVOO over the top. 4. Place the dough into your oven. Cook for 1-2 minutes in a pizza oven or it might take 4-5 minutes in a kitchen oven, until it's golden and puffed up. 5. Once the bread is cooked, carefully open it up (it will be hot) and fill it with the seasoned ricotta mixture. Layer the Mortadella slices on top of the ricotta, then garnish with the toasted pistachios. Finish with a final crack of black pepper and an extra drizzle of EVOO. #shortsvideo #shorts #pizza #LA
