How to identifying Matcha Suitable for Koicha? When you visit tea shops in the city, you often find matcha labelled as suitable for Koicha (thick matcha), which is often sold as premium matcha. Many of these teas are blended and can be enjoyed for their unique aromas and flavours, varying from store to store. Occasionally, customers ask us at d:matcha which matcha is suitable for Koicha. Currently, d:matcha handles 12 varieties of matcha cultivars, and I have tried drinking all of them as Koicha. In my opinion, matcha suitable for Koicha is: Low in bitterness and astringency (varieties with these characteristics, such as Yabukita and Sayamakaori, are not recommended for Koicha) Strong in umami and sweetness (Okumidori and Asahi are also nice choices because it tastes light but less bitter.) Enjoyable aroma along with the above two (Asanoka is easy to enjoy with its aroma) I often judge based on these criteria. While it's possible to drink Usucha (thin matcha) with matcha suitable for Koicha, it may be too bitter to drink Koicha with matcha meant for Usucha. Here are my top three recommended thick teas at d:matcha (based on personal preferences): 3rd: Gokou Gokou matcha is very popular among overseas customers for its aroma and umami. 2nd: Tenmyo This variety has a deep umami flavour, and I would recommend Tenmyou when serving thick tea at tea gatherings. 1st: Ujihikari With no particular bitterness and a beautiful glossy green colour, Ujihikari is my first choice when offering Koicha to those trying it for the first time. Even among matcha enthusiasts, some may not like thick tea, but if you're looking for a slightly delicious and easy-to-drink thick tea, please try Ujihikari.
