Shirini Badami Vegan ( Vegan Persian Almond Cookies) شیرینی بادامی وگان

Recipe makes about 25 cookies Ingredients; 3/4 cup almond flour 3/4 cup all purpose flour 1/2 cup powdered sugar for dough 1/2 cup powdered sugar for topping 1/2 cup coconut oil 1 Tsp rosewater 1/8 Tsp salt 1/2 Tsp finely ground cardamom for dough 1/2 Tsp finely ground cardamom for topping 1 Tsp cornstarch for topping Instructions; Dissolve 1/8 Tsp salt in 1 Tsp rose water and set aside. Place almond flour in a large mixing bowl. Break apart any clumps in the flour. Sift all purpose flour and 1/2 cup powdered sugar into the mixing bowl. Add 1/2 Tsp cardamom, salted rose water, and 1/2 cup coconut oil. Mix together on med- low speed for 1 minute or until dough is pliable. Preheat oven to 400 Fahrenheit. Pinch small pieces of dough and shape into 1 inch balls. Space dough balls evenly on a lined baking tray about 1 inch apart. Score top of cookies with a teaspoon with an X design. Bake at 400 F for 10 minutes. Cookies are done when golden on the bottom. Allow cookies to set 5 minutes. Then transfer onto a rack or a clean towel and cool completely, about 30 minutes. For topping, sift 1/2 cup powdered sugar and 1 Tsp cornstarch together. Add 1/2 Tsp finely ground cardamom and mix well.
