BAKED TOFU BOLOGNESE WITH POTATOES (VEGAN) | Frey and Maria

Our absolute favorite is #BakedTofuBolognesewithPotatoes! 😍 This is a delicious sharing recipe that is kid-friendly and it was so good that every bite was worth it.👌 Have an awesome celebration with your family! 😊 BAKED TOFU BOLOGNESE WITH POTATOES ✨ 10-12 baby roasting potatoes, cut into quarters 250 g firm tofu, crumbled 400 g diced tomatoes (canned) 1 medium-sized onion, diced 3/4 cup carrots, diced 3 cloves garlic, minced 1 tbsp. Italian seasoning 300 ml vegetable stock 2 tbsp. maple syrup 1 tbsp. soy sauce 1 tsp olive oil (optional) Salt and pepper to taste Vegan Cheese Sauce Ingredients: 1/2 cup cashew milk 1 tbsp. nutritional yeast 1 tsp lemon juice 1/2 tsp miso paste 1 tsp cornstarch For the toppings: *chopped basil Method Cut the potatoes into quarters and transfer them in a cast iron skillet. Season with salt to taste and drizzle with 1 tsp olive oil (optional). Gently toss and bake it in the oven for 25-30 minutes for 180 degrees Celsius or 356 degrees Fahrenheit. Prepare the Vegan Cheese Sauce: In a high-speed blender, add the cashew milk, lemon juice, nutritional yeast, cornstarch and miso paste. Blend until you have a smooth consistency and set aside. In a non-stick pan, cook the crumbled tofu for 8-10 minutes. Add the soy sauce and maple syrup and give it a good stir. After that, set it aside in a bowl. Using the same pan, sauté the onion, garlic, Italian seasoning. Add the crumbled tofu, carrots and diced tomatoes into the pan. Mix it well. Season it with salt & pepper to taste and let it cook for 3-5 minutes. Pour the vegetable stock and let it simmer for 15-18 minutes or until the liquid is reduced. Once done, add the mixture on top of the baked potatoes and then pour the homemade vegan cheese sauce. Fan grill in the oven for 10-12 minutes and garnish with chopped basil. Let it cool for 5-10 minutes before serving and enjoy! *Feel free to adjust the recipe measurements according to your preference.
