How To Make Beetroot Barfi At Home - बर्फी रेसिपी - Easy Recipe by Pizzawali Easy Recipe with few ingredients Ingredients : 5 tbsp Ghee 1 cup sooji/rawa/semolina 1 cup sugar 2 1/2 cup beetroot juice Dry fruits 1 tsp elaichi powder Steps to follow : 1) In a pan/kadai, take 2 tbsp ghee and add one cup Semolina/sooji/rawa. Stir it for 7-8 mins till it changes colour. Keep the roasted semolina aside in a plate/bowl. 2) In the same kadai add one tbsp ghee along with split cashews and raisins. Roast them for 2-3 mins on medium flame till the raisins puff up. Keep them aside. 3) To the same kadai, add 2 1/2 cup of beetroot juice. (you can boil some beetroots, cut them into pieces and grind them in a mixie with some water and use a strainer to get the beetroot juice) bring the juice to a boil and let it cook for 2-4 mins till the raw smell goes away. Start adding the semolina in parts and stirring continuously making sure there are no lumps. The mixture will start getting thick soon. Turn your gas to low flame from medium, and add one cup sugar in 2 or 3 parts. Keep stirring it till the sugar dissolves. Now add the roasted dry fruits and mix well. Add 1 tsp green cardamom/elaichi powder and combine well. Add 2 tbsp of ghee and mix. Make sure the mixture is thick and lumpy before turning the gas off. 4) Take the contents out on a plate or tin and spread it evenly. Make sure you do this while it is hot. You can push in some dry fruits at the top as garnishing. Let it cool down completely for 20-30 mins.
